I'm not sure if Age solvers had any better luck but SMH had little of it. It seemed there should have been a rubric published but wasn't.
So my first read of clues gave suspicion that a 'ghost-compiler' was at work because the clues seemed so different. Pushing on, the SW corner gave up a few answers, then Sofitel seemed the only likely answer, then the 'squirrel' clue seemed a coincidence, then uh-oh . . .
Many hotels, or 7dns, were undefined : 10, I think.

4) SCRIMSHAW : S(crim)S,haw---- : this 'onboard' device lives on but not great for newer solvers. 'republican' ? mmm . . .

19) PAMPLONA : cryptic def : and a good one
23) FREE-TO-AIR : (ratio)*=free 'to air', cryptic-wise. 7 or 9 are TV stations not hotel references. (10 too ?)
25) POINT : ddef : 'use' as in 'what's the use?'
26) TOSHIBA : tosh,i,BA
27) ONE-STAR : (senator)* : but you need the full definition in the following . . . clue.
28) LUXURIANT : (i,ultra,UN)*<>x : by=multiply=x
29) SORTA : s,-orta : 'trunk' ? I saw aorta as a 'trunk artery' but it's an artery, no ? Some other synonym ? Seems wrong.

I suppose you can't blame the rubric omission on the compiler. Maybe it was deliberate. The theme was attainable.
There were a few convoluted constructions but a couple of neat ones.
Pretty balanced but 19ac tips it over to a 6/10.

2 My diner coats a diced herb (9) Coriander. 'Diced' as an anagrind seems to be referring to either 'coats a' or 'herb'. It's in the wrong place if it's meant to be referring to 'diner'

5 Label again bordering on rare and revolting? Right on! (6) rename. DA must be desperate if he has to resort to an indirect anagram. The surface reading is not much chop either.
